Method
- Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onion and garlic for 2–3 minutes until fragrant.
- Add sliced bell peppers and cook for another 2–3 minutes.
- Pour in chicken broth, heavy cream, diced tomatoes, and Cajun seasoning. Stir to combine.
- Add the uncooked pasta and cooked sausage back into the pot. Stir well.
- Bring to a boil, then reduce heat and cover. Simmer for about 12–15 minutes, stirring occasionally, until pasta is cooked and sauce is creamy.
- Stir in grated Parmesan. Taste and adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with chopped parsley.
Notes
For extra heat, add a pinch of cayenne pepper.
Swap smoked sausage for andouille for more authentic Cajun flavor.
Leftovers keep well in an airtight container for up to 3 days.
