Method
 

  1. Preheat oven to 400°F (200°C) if finishing in the oven.
  2. In a small bowl, mix garlic powder, paprika, oregano, salt, and pepper.
  3. Rub chicken with olive oil and coat with the spice mix.
  4. Heat a large oven-safe skillet over medium-high heat.
  5. Sear chicken for 4–5 minutes per side until golden brown.
  6. Add cherry tomatoes and spinach (if using) around the chicken.
  7. If using cheese, sprinkle it over the chicken now.
  8. Transfer the skillet to the oven and bake for 10–12 minutes, or until the chicken is cooked through.
  9. Remove from oven, garnish with fresh parsley, and serve hot.

For extra flavor, try using chicken thighs instead of breasts.
