- Preheat oven to 400°F (200°C) if finishing in the oven.
- In a small bowl, mix garlic powder, paprika, oregano, salt, and pepper.
- Rub chicken with olive oil and coat with the spice mix.
- Heat a large oven-safe skillet over medium-high heat.
- Sear chicken for 4–5 minutes per side until golden brown.
- Add cherry tomatoes and spinach (if using) around the chicken.
- If using cheese, sprinkle it over the chicken now.
- Transfer the skillet to the oven and bake for 10–12 minutes, or until the chicken is cooked through.
- Remove from oven, garnish with fresh parsley, and serve hot.
Notes
For extra flavor, try using chicken thighs instead of breasts.
You can skip the cheese for a dairy-free version.
The cherry tomatoes add a nice juicy sweetness that complements the savory chicken.
You can add additional vegetables like bell peppers, zucchini, or olives if desired.
