Method
 

  1. Thinly slice the cucumbers (peeled or unpeeled) and red onion. Place them in a large mixing bowl.
  2. In a small bowl, whisk together the vinegar, olive oil, sugar, salt, pepper, and garlic (if using).
  3. Pour the dressing over the cucumber mixture and toss gently until everything is evenly coated.
  4. Chill in the refrigerator for at least 30 minutes. The longer it sits, the better the flavor.
  5. Before serving, sprinkle with fresh dill and optional feta cheese or cherry tomatoes for garnish.

Notes

Salting the cucumbers first and letting them rest for 10 minutes can help remove excess moisture and intensify flavor.
Dill brings a classic flavor, but you can also try mint or parsley.
Store leftovers in an airtight container for up to 2 days.
Great paired with grilled meats, sandwiches, or other light salads.
For a sweeter version, use honey in place of sugar.
